How much protein should I be taking in to keep lean muscle whilst stripping body fat.

The general consensus seems to be that 1gram per pound of bodyweight is about as much as you should go and about 0.8 grams would be about right for maintaining muscle. It does depend to a degree on how hard and what kind of training your doing though. It's also important to get some protein down within 15 mins of a workout when your body is geared up to utilise it for growth and repair. Spread your protein intake out throughout the day as well, don't eat it all in one go. Drink plenty of water as well to help with protein synthesis. I'd recommend eating quality proteins like fish, chicken and eggs and maybe having whey protein shake with some carbs after a workout as it's easily absorbed in a shake form and can get to work quicker.
