What's the best martial art for fitness?

I'd have to say the best for all round fitness would be mixed martial arts due to it's mix of grappling and striking and tough conditioning, along with Muay Thai, kickboxing and boxing. They all work the whole body in a variety of ways and use pads, punchbags etc which are excellent conditioning tools. All martial arts are good for fitness though, with some more geared towards strength such as grappling, judo etc and some more to speed and aerobic conditioning such as kickboxing, while for all round fitness MMA and Muay Thai are very good as they combine a good mix of strength and speed work.

I would say any that you enjoy doing. What is also important is - not just the martial art you study but also the club you are joining as some are more geared to competition or high performance and others to recreational styles where there may be more technical instruction.
